  I'm pretty sure I'm in the same boat as you. We're using CFChart throughout our application as well and we too have seen some limitations. However, I've also done a good amount searching and haven't found too many that are any better. Once we upgraded to CF9, the newer functionality of the charting has been a little better. For some of the more complex things for CFChart, like multiple axis, formatting of values with more than one decimal place, percentages, etc can cause a headache, but for the most part, all of the charting software that DOESN'T come with a giant price tag have the same issues and many times worse.

  We find ourselves in the same situation and have found some good flash and Javascript charting packages, however our issue is we need to be able to print to PDF and that is an issue going the Flash/JS route.

  At this stage price tag is not a consideration, we first need to find something that works for us. I had run across FusionCharts and was going to try it out, I'll look at those others as well. Printing might be an issue as well for us, I'll need to take a look. I did post this blog entry to my Twitter and to Stack Overflow (I asked the same question there) as well so hopefully between all of this I'll at least have some options.

  Check out JQPlot...jquery based graph/chart plugin. It may help you, plus it is free and written in jquery so it should be customizable.

  One method to get around the lack of JS/Flash image/PDF functionality is to use an HTML to Image converter: http://code.google.com/p/wkhtmltopdf/
  
  Basically a command line webkit utility to convert web pages to images. Works great for displaying the output of browser based charts and providing a save-to-image/pdf functionality.
